Located in North Africa, Algeria is the second largest country on the continent. Its cuisine is eclectic, due to influences from various groups, such as the French, Spanish, Turks and Arabs. Algerian dishes are remarkably flavorful, featuring cumin, caraway, coriander, fennel and other spices.

The quintessential Algerian dish is couscous, steamed and served with meat, vegetables and sauce. Meals usually include lamb or chicken, and sometimes fish from the Mediterranean. Traditional dishes are merquez (spicy lamb sausages), bourek (phyllo pastry stuffed with meat, egg and onion) and brochettes (piquant meat kebabs). Coffee, tea and fruit drinks are common beverages, and tea is typically served with fresh mint. For dessert, Algerian cuisine boasts an array of delicious pastries, such as griouche (honey pastry) and makroud (cookie made with dates or figs). —Alexandra Menglide
