Just like fried chicken or buttermilk pie, pimento cheese sandwiches are popular picnic basket fare in the South. Traditionally served on crackers, in between two slices of bread or on celery, this Southern staple has leapt beyond its humble beginnings. Suzie Augusta Lowe, founder of Augusta’s Creations, makes her pimento cheese with natural Vermont cheddar. It pairs with wine, sliced apples or a summer tomato sandwich, and you can even use it in place of ketchup or mayo on burgers.
