Bacon Goes Raw

user ratingWhen I hear raw, I think crudités. Until now. The cured-meats experts at La Quercia have created bacon that needs no heat, making it the first raw, ready-to-eat bacon. La Quercia’s Tamworth bacon is salted, dried and smoked, akin to the technique for making other cured meats.
“Made just like a flat pancetta, it is cold-smoked with applewood, using only pork, sea salt and spices—no nitrates, nitrites or vegetable substitutes,” says Kathy Eckhouse, La Querica’s chief culinary officer and co-owner with her husband Herb. Sourced from a farm on a hillside of the Ozarks in Missouri, these Tamworth pigs are an endangered heritage breed known as “bacon pigs” because of their particular sweetness and tenderness and the quality of the fat.
Already picked up by renowned chefs, the raw-bacon trend is popping up on menus at the likes of Michelin-starred Vie in Western Springs, Ill., Monettes in Hawaii and Bricco in Harrisburg, Pa. Eckhouse suggests serving it uncooked or lightly cooked as part of a salumi platter with prosciutto, coppa or other cured meats; laying it atop hot bread or flatbread so it melts in and turns translucent; or wrapping it around scallops, asparagus or green onions and grilling or baking for an elegant appetizer. —Denise Shoukas
