Balsamic Swordfish

Serves: 6

Cooking Time: 15 minutes

Ingredients:

3 tablespoons The Artisan Kitchen Three Olives™ Extra Virgin Olive Oil
2 tablespoons The Artisan Kitchen Balsamic Vinegar
1 ½ teaspoons The Artisan Kitchen Dried Oregano
The Artisan Kitchen Pacific Sea Salt & freshly-ground pepper
1 ½ pounds swordfish steaks, about 1-inch thick or another firm fish

Method:

1. In a glass or ceramic dish, combine 2 tablespoons olive oil, Balsamic vinegar, oregano and salt and pepper, to taste. Add swordfish; let stand 15 minutes, turning occasionally.

2. In a large nonstick skillet, heat remaining 1 tablespoon of olive oil over medium-high heat (or heat ridged grill pan). Add swordfish. Cook 5 minutes per side or to desired doneness (surface will begin to caramelize).
