In 2000, Charles Rolls, of the Ply-mouth Gin company, was disappointed by the lack of high-quality tonic on the U.S. market. Rolls joined forces with Tim Warrillow, a food marketer, to analyze the composition of mixers. The pair discovered that many were preserved with sodium benzoate, and that the use of cheap lemon aromatics and artificial sweeteners was widespread. “Mixers were not keeping pace with advancements in spirits.” says Mark Rajeski, president of Brands of Britain, LLC, a company that sources products from Britain.
Rolls and Warrillow soon created a tonic water, with quinine that was sourced from the Rwanda Congo border. They named their company Fever Tree, the colloquial name for the Cinchona tree, in which quinine is found, and began importing via Brands of Britain.
Fever Tree continues to create premium mixers, including sofiTM Award Winner Ginger Beer. This product has been gaining ground with mixologists, as well as with consumers as a beverage consumed on its own. It is made with a variety of gingers including fresh green ginger from the Ivory Coast, earthy/chocolaty ginger from Cochin in India and hot Nigerian Ginger. “You can see the ginger in the bottle,” says Rajeski. “It has strong flavor and fizz, and contains no artificial sweeteners, flavorings, colors or preservatives.” Ginger Beer is packed in single-serve glass bottles for maximum freshness and fizz. —Nicole Denis
