The cuisine of Burkina Faso is typical of West Africa and is based on sorghum, millet, rice, maize, nuts, yams, okra and grilled meat. Sauces with various spices are central to the Burkinabe diet and usually served over rice (a popular dish called riz sauce), meat or tô, a type of dough made of sorghum or millet. Riz gras is considered the national dish—rice cooked in animal fat, flavored with tomatoes and spices. With the exception of fish, meat is not a staple in Burkinabe cuisine. Occasionally chicken is served on skewers (brochettes), but this is considered a delicacy.

Water is the most popular beverage throughout West Africa because of its ritual significance, but other options include millet beer and palm wine. A favorite local drink is called zoomkoom, made of millet flour and water and flavored with ginger and lemon. —Alexandra Menglide
