Champagne Peach Sauce for Duck

- one 20.5 oz. can Cling peach slices
- 1/2 cup Champagne
- 1/3 cups brown sugar
- 1/2 tsp. mace
- Fresh Maple Leaf Farms All Natural Whole Duck, roasted
Method:
1. Drain peaches. Puree in blender. Add Champagne, very carefully. Replace lid on blender and give puree button one quick on/off spin to combine wine and peaches.
2. Transfer to a small sauce pan. Add brown sugar and mace and stir until completely blended over high heat. Bring to a boil. Reduce heat and simmer for 10 minutes (longer if desired to be thicker).
3. Serve hot on the side with roast duck to preserve skin crispness.
