Born and educated in Kerala, the southern state in India, Ann Varkey, founder and CEO of Rolls Enterprises, Inc., Pittsboro, N.C., lets her expertise show in every jar of her authentic Indian sauces and condiments, including award-winning Kerala Curry Tomato Chutney.
The chutney is based on a family recipe that Varkey has updated by removing coconut oil for sautéing the spices while preserving the traditional taste. To retain flavor freshness, she roasts and grinds whole spices the same day or day before cooking. The chutney is made with 100 percent natural ingredients that are slow cooked in small batches in gas-fired kettles. Each jar is then filled by hand.
“Chefs use Tomato Chutney as a condiment, dipping sauce and cocktail sauce, as well as use it in curried dishes,” Varkey notes. The chutney makes a delicious condiment with grilled or roasted beef, chicken, pork and lamb and is an excellent glazing and cooking sauce for seafood. It’s also a great table sauce for vegetables, sandwiches, burgers or barbecue. Or, customers can pour it over cream cheese and serve with crackers for a snack.
