Cranberry, Fig and Caramelized Onion Relish

This should be served with Chef Bologna's Roasted Loin of Pork with Spicy Peach Glaze.

Ingredients:

1 lb. fresh cranberries
1 cup sugar
½ cup water
1 pint fresh figs, quartered
12 oz. red currant jelly
¼ tsp. salt
1 small onion, thinly sliced, caramelized
½ tsp. lemon juice

Method:

1. In a saucepan over low heat, combine cranberries, sugar, water, figs, jelly and salt. Bring to simmer for 10 minutes.

2. Add caramelized onions, and simmer for additional 20 minutes.

3. Remove from stove, stir in lemon juice, cool and refrigerate overnight. Serve at room temperature.
