Culinary Collective Zocalo Purple Corn Flour
user ratingPurple corn is botanically the same species as regular table corn but has a deep purple color, and has long been used by people of the Peruvian Andes to color beverages and food. The purple color is due to natural pigments known as anthocyanins, which give the corn a higher antioxidant capacity than blueberries. Use wherever regular corn flour and corn meal would be used, such as in breads, tortillas, pancakes, muffins and cakes. Or use as a substitute for other flour to give corn-based dishes an extra antioxidant burst. It will add an amazing color to traditional recipes while boosting the nutritional value. Zocalo Purple Corn Flour is organic and gluten-free. —Vanessa Facenda
