Washington’s Rising Star Leads the Historic 1789 Restaurant
user ratingDaniel Giusti, nominated for Rising Culinary Star by the Restaurant Association of Metropolitan Washington in 2009, is the new executive chef at the landmark 1789 Restaurant, coined “one of the best restaurants in the nation’s capital,” by The Washington Post and Washingtonian. “It is a great honor to be associated with the historic 1789 Restaurant due to its long standing history and loyal clientele,” says Giusti. “To develop the menu for a restaurant such as this one, I feel it is important to put my stamp on it by making dishes that really reflect my style of cooking, but at the same time respecting what this restaurant is all about and what type of food our customers want to eat when they come here.” Giusti’s culinary talent was honed at the popular Restaurant Guy Savoy in Las Vegas, named one of the country’s top new restaurants by both Esquire and Travel & Leisure in 2006, and at some of Washington’s elite kitchens, including the Old Ebbitt Grill and Clyde’s of Gallery Place, as well as in Italy at the Michelin one-star Ristorante Pinocchio in Piedmont under Chef Piero Berinotti. His fresh approach to 1789’s seasonal American cuisine is now being shared with the foodspring community including Giusti’s recipes for Beet Ravioli, Oyster Gratin, Pear Salad and Pork Chops with Cider Vinaigrette.
