Pam Kraemer, founder of Dulcet Cuisine, had already established a successful line of exotic sauces, spices and mustards that showcased Moroccan, Creole and Indian flavors. Next, she wanted to find a vehicle to bring the curry flavors she had experienced while living in Europe to the American palate—but with an all-natural and gluten-free bent.
Kraemer noticed that, other than some substitution of corn syrup with more healthful alternative sweeteners, there was not a lot of creativity in the ketchup category. So, she set out to create a multi-tasking condiment that would ignite ketchup’s traditional fare. “It was time to add some spice and interest to a tired category, and exotic ketchup was the next natural step for us,” she notes.
At the 2009 Winter Fancy Food Show, Kraemer introduced Peppery Moroccan, Sweet Orange Chili and Mild Indian Curry ketchups. The latter, she explains, was the hardest to develop. “It took time to come up with what I was looking for—something not too tomatoey and not overpowered with curry.”
Sweetened with pure cane sugar, the Mild Indian Curry ketchup is a marriage between the ingredients in Dulcet’s curry sauce and Kraemer’s basic ketchup recipe. “It is not pungent like some curries can be,” she adds. According to Kraemer, its flavor profile creates a versatile product. “We call it a ketchup, but it can be used as a cocktail or barbecue sauce,” she says. —Nicole Denis
