user ratingThe small Central American country of El Salvador has a rich national cuisine based in local ingredients such as corn and rice as well as an abundance of fresh fruits and vegetables including mangos, squash, pineapples, tomatoes and chipilin, a type of leafy green.
Pupusas, a Salvador staple, are handmade corn tortillas filled with any mixture of beans, meat and cheese then grilled and served with pickled cabbage salad and salsa.
Other simply delicious cuisine includes fried plantains served with sour cream and beans and pollo encebollado, or simmered chicken and onions.
Salvadorans drink a lot of hot chocolate and coffee as well as fruit drinks, both refrescos and batidos (milkshakes), and horchata, a drink made from rice, cinnamon, allspice and the native seed moro. Desserts include pastries such as semita, a coffee cake-type dessert and the Salvadoran quesadilla, a sweet pound cake flavored with sour cream and Parmesan cheese.—Leska Tomash
