Pete Marczyk and Barbara Macfarlane of Marczyk Fine Foods in Denver, Colo., dish on the perfect menu to celebrate dad, from specialty cheeses to a recipe for their award-winning hummus for complementing a big, juicy, grilled steak.—Nicole Potenza Denis

Marczyk recommends buying the best quality steak you can find; just adjust the cut to fit your budget. He calls Niman Ranch about the best you can find in the states, and recommends the porterhouse—it’s big and important, just like your dad. If you want some added flavor, rub it with Char Crust Original Hickory Grilled rub.
