Fortune Cookies Recipe
Chef Cheryl Mui-Lu offers a recipe for her Chinese-American fortune cookies.

Ingredients:2 large egg whites
½ tsp. pure vanilla extract (Bi-Rite Market suggests using Nielsen-Massey Organic Madagascar Bourbon Pure Vanilla Extract)
½ tsp. pure almond extract
3 Tbsp. vegetable oil
3 tsp. heavy cream
¼ cup all-purpose flour
¼ cup finely ground blanched almonds
1½ tsp. cornstarch
Pinch of kosher salt
½ cup granulated sugar
1. Preheat oven to 325 degrees F. Spray a baking sheet with vegetable spray and line with parchment paper. Spray parchment again with vegetable spray. Set aside.
2. In a medium bowl, whisk egg whites, extracts, oil and heavy cream until combined and slightly foamy.
3. In a small bowl, combine remaining ingredients.
4. Mix dry ingredients into wet until just combined.
5. Spoon 1 level tablespoon of batter onto baking sheet. Using an offset spatula, spread batter into a 4-inch-diameter circle. Repeat with remaining batter, leaving 2 inches between each circle.
6. Gently tap the baking sheet to evenly distribute batter. Each sheet should fit 4 cookies.
7. Bake for 7 minutes. Rotate baking sheet and bake for an additional 5-7 minutes or until the edges become golden brown.
8. Working quickly, use an offset spatula to loosen each cookie. Fold the cookie into a half-moon shape, and gently pull the edges down over the rim of a glass or wooden spoon handle. Continue with remaining cookies. Let cool before serving.
