user ratingFrench Guiana, located on the northeast coast of South America adjacent to Brazil, is an overseas outpost of France. The local cuisine reflects broad cultural diversity with Creole, Cayenne, Asian and French, of course, among other European influences.
Bouillon d'aoura is a local dish comprising smoked fish, prawns, crab, chicken, vegetables and aoura, fruit of Savana trees. Roti is a type of flatbread filled with a variety of ingredients. Aloo roti is stuffed with mashed potato, cumin and ham or duck and spices. For a sweet version try it with coconut and sugar.
As a seasoning, cayenne pepper (taken from the country capital’s name) is often used in local dishes. The surrounding forests offer game such as collard peccary, also known as Mexican hog, and tapir, another pig-like animal usually eaten as a friscasse. The area supplies fresh seafood as well as local fruits and vegetables.
