First launched in the early 1980s, its Mushroom Profiteroles remain one of the best sellers for Good Wives/Innovative Foods, of Lynn, Mass. This classic appetizer is made by filling a hand-cut, golden brown, mini pâte à choux, with a creamy sherry-seasoned mushroom duxelle, a little bit of cream cheese and crushed pieces of New England walnuts.
“It’s a nice item that appeals to omnivores and vegetarians alike,” says Chris Collias, CEO of Innovative Food, a distributor and manufacturer of foodservice items that bought Good Wives when original owner Nina Robertson retired in July 2006. (Robertson continues as a consultant with the company.)
“One of the great things about the Mushroom Profiteroles is that they are elegant yet durable,” notes Collias. “They’ll hold up well in a hot box for a banquet or in a chafing dish at a hotel concierge level suite. But they are also great coming right out of the oven and being served as a first course at a dinner party or passed at a wine tasting,” he adds.
This item is best displayed upright in a reach-in freezer, along with other products in the line including Fillo Pastries, Puff Pastries, Flatbreads, Mini Quiches & Cheese Tartlets, Tortilla Wraps and Crisps, and Feuille de Brick Pastries.
