Traditional Georgian cuisine varies regionally, however the food culture is important throughout the country with emphasis on feasts, or supra, at which multiple dishes are prepared and accompanied by wines of local vineyards.
Bazhe is a dish comprising fried or boiled chicken with a walnut-saffron sauce and chanakhi is a lamb dish layered with eggplant, garlic and parsley and baked in a clay pot. A lighter dish may be catfish simmered with a cilantro and white wine sauce.
