Although it is known as the hottest pepper in the world, the ghost chile was appealing more for its depth of flavor and how it complemented the company’s buttery caramel. “It has a delicate flavor that isn’t in your face with heat,” Lawrence notes. “It is appealing to everyone, not just thrill-seekers of heat.”
The ghost chile, which is organically grown specifically for the Seattle-based business by a nearby Washington farmer, has a smoky and earthy flavor. The caramel-filled chocolate bar pairs the dried chiles with a sprinkling of Hawaiian red sea salt.
Although the caramels can be eaten on their own, they pair well with microbrew beers. “The beer cuts through some of the butteriness and enhances the chili flavor,” Lawrence says.—Nicole Potenza Denis
How to Enjoy It: Slowly, in small bites if you’re timid. And be sure to have a glass of milk—or beer—on hand to temper the heat.
