The Central American country Guatemala has a cuisine that encompasses ancient Mayan, Spanish and contemporary influences. Corn, black beans and amaranth are staple ingredients of the Guatemalan diet, as are dishes such as enchiladas, tamales and empanadas.

Kak’ik is a traditional thick turkey stew with cilantro, tomatoes, garlic and achiote (annatto). Other popular dishes include churrasco (charcoal-grilled steak), chiles rellenos, hilachas (shredded beef in a hearty tomato sauce served over rice) and seafood tapado, a coconut soup with red snapper, shrimp, banana, bell peppers and rice.  

Flan is a favorite dessert, sometimes served with warm bananas and chile-scented chocolate sauce. Drinks include fruit milkshakes and Quetzalteca, a locally made sugarcane-based alcohol.—Leska Tomash
