Cal Hancock, owner and founder of Hancock Gourmet Lobster Company, explains that the company’s goal before introducing any new product is to make it so good that people won’t be able to ignore it. Released at the end of last year, Linekin Bay Lobster Corn Chowder hits that mark, adding yet another sofi™ Gold Award to the company’s portfolio and its second one this year. Focusing on fresh lobster taste for this creamy and decadent corn chowder does not disappoint.
“I love making chowders and soups, but sometimes I don’t want to use potatoes,” says Hancock. “We decided we would try the Lobster Corn Chowder because it seemed like a natural pairing of sweet corn and tender Maine lobster.”
Made in small batches to insure the integrity of the Hancock family recipe, the chowder is composed of all-natural ingredients. Using just the right amount of spices, cream, milk, lobster meat and lobster stock, the dish works as a stand-alone meal or as a first course, served with crackers or crusty bread.
Along with local lobster, the chowder contains dairy products from the Oakhurst Dairy in Portland, Maine, which does not use artificial growth hormones (rBST) in production. The chowder’s taste is complemented by its convenient preparation. It must be kept frozen until ready to use, and after being thawed in the refrigerator can be heated in a saucepan or double-boiler until it begins to simmer. —Dennis Marrero
