The cuisine of the island country of Jamaica involves lots of flavor and spice derived from sources such as scotch bonnet peppers, ginger, thyme and the pimiento berry (also known as allspice). Cattle are rare, therefore many dishes use local seafood as well as chicken and goat.

The national Jamaican dish is saltfish sautéed with ackee (a local fruit), scotch bonnet, pimiento and possibly garnished with crisp bacon and fresh tomatoes. Other popular meals are curry goat and jerk-spiced chicken. Tropical fruits and vegetables flourish in the verdant terrain, including callalloo, a leafy spinach-like green, avocado, pineapple and mango.

Desserts include gizzada, a small pastry tart filled with spiced coconut filling, banana fritters and plantain tarts. Local beverages are ginger beer, mango smoothies and, of course, Red Stripe, a Jamaican lager.
