Located in the Baltic region of Northern Europe, Latvia is bordered by Russia, Estonia and—across the Baltic Sea—Sweden. Latvians hold a great respect for food and for using local items to create seasonal delicacies. Therefore summer meals integrate fresh vegetables and berries with meat and seafood while autumn brings freshly butchered pig and foraged mushrooms, cranberries and nuts. Hardy winters offer many root vegetables, baked breads and preserved food such as jams, pickles and homemade wines. Smoked flounder, salmon and eel are popular along with rich dairy products such as cottage cheese, kefirs and Janis’, a caraway cheese served during festivals.

Traditional dishes include sweetbreads with dried fruit, sorrel and pork soup with potatoes and barley and kotletes, or meatballs with potatoes. Customary beverages are kvass, a yeast-based, non-alcoholic drink, kefirs, birch juice, local beers sometimes flavored with honey or juniper berries and vodka.—Leska Tomash
