user ratingInspiration for new products at Hancock Gourmet Lobster Company comes from a variety of sources. “We always look at recipes my family made or ones that are traditional to Maine, and then try to add something to make it a bit special,” says founder Cal Hancock. A recipe for a lobster casserole that she came across in a magazine originally inspired the lobster risotto, which Hancock developed with her executive chef.
“We strive to prepare something with lobster for people to enjoy at home without the fuss,” she says of her recipe that comprises Maine lobster, a rich beurre blanc sauce and Arborio rice cooked with cremini mushrooms and Swiss cheese, then topped with panko breadcrumbs mixed with lemon-herb butter.
The risotto is measured into perfect 4-ounce portions and served in beautiful scallop shells. Though the win is technically for its availability in the foodservice industry, you can order and enjoy this gourmet dish in the comfort of your home.—Deborah Moss
How to Enjoy It: Hancock says restaurants and resorts like to pair the risotto with a petit filet for a twist on surf-and-turf. It’s also a perfect size for a light lunch or appetizer, with minimal fuss since it’s ready to heat and serve.
