Mac 'n Cheese Meatloaf

Ingredients:

1 pound of ground turkey (or beef, pork or veal)
1 egg
1/3 cup seasoned bread crumbs
¼ cup shredded mozzarella cheese
¼ cup frozen spinach
4 tablespoons tomato paste
1 cup sautéed zucchini (or any leftover vegetables you may have)
1 cup leftover mac ‘n cheese
¼ cup chicken broth

Method:

1. Preheat oven to 350 degrees F. Mix all ingredients together in a bowl minus 2 tablespoons of tomato paste and chicken broth.

2. Shape into a loaf and place mixture in a loaf pan. Spread remaining tomato paste on top and drizzle chicken broth around mixture. Bake 1 hour or until internal temperature reads 165 degrees.
