With Creole, Indian, Arabic, Chinese, French and British influences, the eclectic cuisine will appeal to virtually any craving. Intense spices and rich flavors are essential to Mauritian cooking, and most recipes feature tomatoes, onion, ginger, garlic and chile peppers as key ingredients.
On the island, seafood is central to every day life and ranges from marlin to octopus. Fish is often prepared with spicy carri (curry). One of the most traditional dishes is chapati, a thin flatbread, served with beans and chile sauce. Noodles, biryani (curried rice) and gâteaux piments (deep-fried balls of lentils and chile) are just a few of the other popular delicacies found in Mauritius.
The national drink is rum, but whisky is just as customary—a legacy from British rule. Mauritians also enjoy beer, tea, almond milk and tamarind juice to quench their thirst.—Alexandra Menglide
