At 600 acres or 0.8 square miles, the country of Monaco is the smallest principality after Vatican City. However, surrounded by France and the Mediterranean Sea and with Italy in close proximity, Monaco has no lack of culinary influence and resource. Monaco is almost fully urban and offers decadent nightlife, shopping and casinos.

Customary Monegasque meals include brandamincium, salt cod pounded and simmered with cream, garlic and served with cardoons, an edible thistle-like plant with artichoke flavor; fougasse, an orange flower water pastry sprinkled with almonds and aniseed; and stuffed sandwiches known as pan bagnat filled with chopped vegetables, anchovies and black olives. Of course, ravioli, lasagne and pizza are quite popular along with cured and smoked meats and champagne is the well-liked beverage of Monaco.—Leska Tomash
