In Mozambique, you will find delicious food characterized by strong hints of Portuguese and Indian cuisine. Meals usually consist of cassava or rice, paired with beans, vegetables or fish. The most popular condiments are coconut milk and piri-piri, a hot pepper relish. Chicken with piri-piri is a national specialty. Cashews, a Portuguese legacy, are common ingredients in traditional dishes. For special occasions, Mozambicans use the nuts to prepare bolo polana, a cake made with cashews and potatoes. In addition, cashews are used for making many of the local beers. The diverse cuisine also features curry dishes and samosas—a testament to the Indian influences on Mozambican food.

Fresh seafood from the coast is consumed on a regular basis, usually grilled and flavored with coconut milk or piri-piri. Prawns, lobster, crayfish and calamari are some of the many types of seafood offered throughout Mozambique. Other typical fare includes espetadas (kebabs), pudim (pudding) and prego (steak sandwich). Portuguese wines are widely available in Mozambique and often used for cooking; such as when making matata, a seafood and peanut stew.—Alexandra Menglide
