Nicaragua, the largest country in Central America, is home to delicious and creative cuisine, ranging from approachable to adventurous.

One could simply have roasted corn on the cob from a street vendor, or try Mondongo, a hearty bowl of tripe soup served with a side of rosquillas, cheese and cornmeal biscuits. Nactamales comprise corn, mashed potato and shredded pork wrapped in plantain leaves and slow-boiled.

Nicaraguans are not people to waste; as seen with Mondongo, all parts of the animal
including the tail, brain, skin and hoovesare used in many dishes. Chicharron is seasoned, deep-fried pork skin enjoyed either solo or as a salad with cabbage, tomato and yucca.

Popular drinks include gaubul, made from green banana, coconut water and sugar. For dessert, tres leches is commonly enjoyed, a cake made with, you guessed it, three milks.
