No Goat Left Behind

Goat is becoming a popular meat choice, thanks to efforts by Brooklyn-based Heritage Foods, which has introduced a new project called No Goat Left Behind. Set up to tout the delicious and nutritious attributes of goat meat, the program is a win-win for both consumers and farmers. Unbeknownst to most shoppers, for a female goat to produce milk, she must have babies—which means that farmers have to figure out what to do with the abundance of male goats. No Goat Left Behind will give dairy farms a boost by helping create more demand for this quality meat. Heritage will rely primarily on two Vermont farms, including Twig Farm, where the bulk of goats’ current diet is pasture and fresh hay.

Goat is a pretty healthy choice compared with the competition. With 50 percent less fat than beef, 45 percent less fat than lamb and 15 percent less fat than veal, goat meat provides rich flavor with less saturated fat and higher levels of mono- and poly-unsaturated fat (meaning less cholesterol) than other meats.

At $15 per pound for a half-goat (about 20 pounds of meat), you can get really creative in the kitchen. Each No Goat Left Behind Package includes numerous recipes and a DVD with footage of the farms, interviews with farmers and processors, and chefs, like Cruz Goler of Lupa, Jacques Gautier of Palo Santo and Zak Pellacio of Fatty Crab, demoing ways to prepare a whole or half-goat. —Denise Shoukas
