Based on geography Northern Asia comprises Russia, although culturally, Russia shares more in common with Europe. Mongolia and parts of China can also be considered Northern Asia. Northern China includes Hong Kong, Beijing and Taiwan—places that have not only shaped history, but also Asian cuisine as a whole. The Northern Chinese approach food with color, aroma and flavor in mind, and the result is a cuisine that is exciting to the eyes, the nose and of course, the tongue.—Alexandra Menglide
