user rating“Most of our ideas evolve from classic flavor combos and then we add a twist,” says Tom Quinn, vice president of operations at Nuovo Pasta Productions. “Spinach and mushroom really fit well together. We marry these cool base ingredients with a great cheese.”
The sofi Award–winner is a green-and-white–striped ravioli filled with spinach that has been sautéed and blended with slow-roasted portabella mushrooms and Gruyère cheese. “You have to create unique products, but there’s a fine line—people also have to love it,” Quinn says. Other popular raviolis in the Nuovo Pasta line are the Goat Cheese & Roasted Tomato Ravioli, Crab & Lobster Ravioli, New England Lobster & Herb, and Gorgonzola & Sundried Tomato.
