Orzo Mac and Cheese Recipe

Banks White, executive chef of FIVE in Berkeley, Calif., emphasizes a farm-to-table approach with his menu of reinvented American classics. Here, he shares his signature recipe for orzo mac and cheese with smoked gouda and cheddar.

Serves: 4

Ingredients:

1 quart cream
2 pounds smoked gouda
1/2 pound white cheddar
Salt to taste
1 pound orzo
1/2 cup chopped chives
1 cup of toasted bread crumbs

Method:

1. Bring cream up to boil, then lower heat and add cheese and salt. Whisk together until contents are smooth. (You can also use an immersion blender if the cheese does not melt completely.)

2. Cook orzo until tender.

3. Add cheese mixture to pasta with 1/2 cup of chopped chives. Mix until well incorporated. 

4. Place in a baking dish and add toasted bread crumbs. Bake until mac is bubbling, and bread crumbs are toasted.
