user rating Because of Panama’s central location and rich history, its cuisine is an eclectic blend of foods from around the globe—with the greatest influence coming from Spanish, African and Native American cultures. Officially, Panama is the southernmost nation in North America but geologically it is the link between the North and South American continents. The Panama Canal was completed in 1914, elevating the country’s vital position as a gateway to the world and bringing an even greater international flair to the table.
Panamanian meals often include meat, coconut rice, beans and indigenous fruits, herbs and vegetables including yuca, squash, and plantains. Sancocho is a traditional stew made with meat (usually chicken) and vegetables. Deep-fried corn tortillas with eggs and cheese are traditionally served for breakfast, and locally grown Panamanian coffee is excellent. Carimanola, fried yuca stuffed with ground meat, is another popular breakfast food. Other traditional dishes include meat, potato and/or cheese empanadas and deep-fried plantains or patacones, all well worth a try.—Jennifer Capalbo
