Following the food rules of Passover can get tricky. The complexities surrounding this holy holiday restrict grains such as wheat, corn, spelt, rye and barley, and desserts never include white flour.

Chef Avram Wiseman at the Center for Kosher Culinary Arts in Brooklyn, N.Y., says adding shiitake mushrooms to an apricot matzo stuffing is an updated side for a roast chicken. The school’s pastry chef Philippe Kaemmerle satisfies a sweet tooth with Floating Islands, his recipe for crème anglaise, featuring almond milk, a great nondairy alternative.
