Pitmaster Carey Bringle, the man behind Peg Leg Porker’s line of sauces, dry rubs, marinades and barbecue tools and kits, grew up under the spell of good barbecue in Memphis, Tennessee. Surrounded by a family and community passionate about cooking barbecue the right way, it was at a very young age that he started his education. But it wasn’t until he was diagnosed at age 17 with osteogenic sarcoma, an aggressive bone cancer to which he lost his right leg, that he came away with a zest to enjoy life to its fullest. That included enjoying more great food and sharing it with others.

“There is a culture around barbecue that I love. Slow smoking gives you time to sit around and visit. You can enjoy the evening with family and friends. It really brings people together and when you are the pitmaster, you are the king of the grill,” he says.

His passion for barbecue spans from him competing on a smoking team for 12 years to the moment when Evan Lobel of Lobel’s of New York asked him to bottle his dry seasoning and sauce. “He said that if I did, he would feature it on his website. That is when the real production began.”

Word spread fast. His Peg Leg Porker Memphis Wet Sauce was named number two in Bon Appetit’s lineup of Championship BBQ Sauces in 2008, and he has been asked to serve up his best West Tennessee barbecue for Esquire Magazine’s “Best Of” party and Food & Wine magazine’s “Classic at Aspen.”

Accolades aside, Bringle’s mission is to teach people to create great barbecue. Since he can’t do that in person with everyone, he’s created the Smoke Like a Pro Kit ($39.95). “It's not rocket science, but most people have just never had anyone who knows what they’re doing teach them what to do. That is what I try to do with my Smoke Like a Pro kits. I break the process down step by step and prove that anyone can cook great barbecue if someone teaches them the right way.”
