Puerto Rico is one of the largest islands of the archipelago Antilles that encircles the Caribbean Sea. The local cuisine is called cocina criolla, or Creole cooking, and comprises influences of island natives, the Arawaks and Tainos, as well as Spanish, Mexican and African.

Soups are popular with varieties such as pollo con arroz, or chicken with rice, sopon de pescado, a fish soup prepared with the head and tail and seasoned with garlic, tomatoes and sherry, and asopao, a thick gumbo that although not officially a soup eats like one with shellfish or chicken, salt pork, a medley of peppers and chorizo sausage.

Puerto Rican cooking uses intensely flavored bases such as adobo and sofrito to enhance meats. The former blends crushed peppercorns, oregano, garlic, lime juice and vinegar while the latter is a seared medley of onions, garlic, coriander and achiote (annatto seeds). These blends are used in the preparation of barbequed whole pig, beef stew and roasted leg of lamb.

Desserts include caramel flan or nisperos de batata, or sweet potato balls scented with coconut, cinnamon and cloves. Local drinks include strong, aromatic coffees, cold beer such as Medalla and a variety of locally produced rums.—Leska Tomash

sestrada I think that you need to go back to Puerto Rico, before you could write another article about our Puerto Rican Food. Puerto Rican food has no comparison to Mexican Food, We do not even call the food the same. Puertorican eat ARROZ CON HABICHUELAS and Mexican eat Arroz con Frijoles. Mexican eat cochinos and Puerto Rican eat Puerco Asado. We do not even use the same seasonings. Nest time get your facts straight. And if you want I will invite you to my Puertorican home so that you could really experience some real Puertorican Food
boxingwarrior1 i have been to puerto rico three times,and it does resemble mexican food in a way,they both eat rice and beans,soup is eaten a lot in pr..the spices like garlic and adobo is also used in mexico...flan is used in both places,i noticed they eat somethings that are similar and just the name is different,all though i think the mexican seafood the way it is prepared is the best and their soups are second to none..puerto rican food was ok,but nothing that made me want to have seconds,i went to three different cities to accompany a friend and stayed there for 2 weeks
xander Puerto Rican food is nothing like Mexican food, we eat different types of beans and we have different spices. I've never seen a mexican use adobo in their dishes and i know i use it on almost everything. People need to understand that there is a difference. Also, everyone knows that the arroz comes first in the names jeeze! hahah
Melba Have you ever tried puertorican food? That Mexican reference makes me aks my self, How accurate this site is? Our main dishes are not derived from corn, that is the base of Mexican dishes. Our criollo cusine has the influence of Indians, Africans and Spaniards. We were under the Spanish goverment for more than 400 years so, we still eat some authentic Spanish dishes,and we adapted other disher to our taste. FYI most of the dishes that the Latino countries have in common are Spanish dishes. Like Flan, Tres leches, chorizo, paella, etc.
