Red Velvet Cake

With Cream Cheese Frosting

For the cake:

Ingredients:

2 ½ cups flour
1 ½ cups sugar
1 ½ teaspoons baking soda
1 teaspoon cocoa
1 cup buttermilk
1 ½ cups vegetable oil
1 teaspoon vanilla extract
2 eggs
1 bottle red food coloring
1 teaspoon white vinegar

Method

1. Preheat oven to 350 degrees F. Grease and flour the baking pans.

2. Put dry ingredients in a large mixing bowl. Add buttermilk, oil, vanilla, eggs, food coloring and vinegar, in the order listed. Bake in two 9-inch round pans at 350 degrees F. for 20 to 25 minutes.

For the Frosting

Ingredients:

½ cup butter, softened
8 ounces cream cheese, softened
1 pound confectioners’ sugar
½ teaspoon vanilla extract
1 ½ cups chopped pecans, roasted

Method:

1. Cream butter and cream cheese till light and fluffy. Add sugar and gradually stir in vanilla and pecans.
