Roasted Potatoes with Truffle Salt

Ingredients:
1 1/2 to 2 lbs. red potatoes, cut into wedges
1 medium-size sweet onion, cut into small wedges
olive oil
Italian White Truffle Salt
freshly ground pepper
1. Put potato and onion wedges in zip lock bag. Drizzle with olive oil, seal and toss in bag to thoroughly coat vegetables.
2. Remove from bag and place in single layer on roasting pan or baking sheet. Generously season with Italian White Truffle Salt and freshly ground pepper.
3. Roast for about 30 to 40 minutes, turning potatoes occasionally until are nicely browned and fork tender.
