Salmon Cakes Recipe

Executive Chef Michael Hartnell of Le Caprice at The Pierre Hotel shares recipes from his menu of classic British dishes and new American recipes with an intercontinental flair.

Ingredients:

Lightly poached salmon
Mashed potato mix
Anchovy essence
Worcestershire sauce
Tomato ketchup
English mustard
Potato powder (depending on consistency of mix)
Salt and freshly ground black pepper

Method:

1. Mix the mashed potato with half the salmon meat, anchovy essence, Worcestershire sauce, mustard and tomato ketchup. Depending on the consistency of the mix add potato powder to adjust. Season to taste then fold in remaining salmon. Mold into cake form.

2. Steam the salmon for approx. 11 minutes then serve.
