Savory Parmigiano-Reggiano Spread (Maionese al Parmigiano-Reggiano)

Use this as a dip or sandwich spread. Try it with this recipe for a Portabello Mushroom Sandwich.

Ingredients:

13¾ oz. can artichoke hearts, water-packed
1 cup mayonnaise
1 cup grated Parmigiano-Reggiano

Method:

1. Drain artichoke hearts and chop into small pieces.

2. In a small bowl stir together artichokes, mayonnaise and Parmigiano-Reggiano. Cover and refrigerate until needed.
