If anyone knows Jamaica, it's Winston Stona of Busha Brown's Fine Jamaican Produce. After working as a promoter of a then-small Jamaican record label called Island Records, and appearing in films such as The Harder They Come, Cool Runnings and One Love, Stona is now making a name for himself in food. In the video below, Stona dishes about the Scotch Bonnet pepper that's used in Busha Browne's Pukka Hot Pepper Sauce. The sauce is recommended only for serious heat lovers, but Stona says its distinct flavor profile sets it apart from others. Pukka (pronounced "puck-ah") translates to "real" or "genuine", and the flavor and fragrance of the Scotch Bonnet is what Stona calls Jamaica's real thing.
