Located in the Indian Ocean off the coast of Madagascar, Seychelles is a small island nation comprised of an archipelago of more than 100 islands. The rich ethnic culture of Seychelles is reflected in the traditional cuisine that blends influences of Creole, French, Indian and flavors of Asia.

Popular dishes include local seafood served with a green or red curry sauce with coconut milk and lemongrass as well as grilled octopus basted with ginger, crushed garlic and chilies. Many dishes are served with long grain white rice prepared plain, spiced or saffron-scented, or a sliced baguette. Condiments are popular and include chatini, which comprises sliced, chilled and marinated vegetables such as eggplant, cucumber, cabbage, papaya or giraumon, a type of local pumpkin.

Desserts include fresh papaya or banana served in a caramel cream sauce, bread custard pudding and coconut sorbet. Sparkling water and fresh-squeezed juices are popular as well as the local coconut liquor Coco d’amour.—Leska Tomash
