user ratingOutstanding Shelf-Stable Foodservice Product 2009: Sid Wainer & Son Sakurauchi Sa Yuzu Marmalade
Last summer, New Bedford, Mass.-based Sid Wainer & Son Specialty Produce & Specialty Foods, introduced a little ‘tartness’ to its popular Jansal Valley Asian Line with the launch of Sakurauchi Sa Yuzu Marmalade. And that tartness has turned out to be pretty sweet as the product took home a sofi Gold Award.
In the midst of Jansal Valley’s line of white soy, Korean chile paste, organic miso and other Asian specialties, Sakurauchi Sa Yuzu Marmalade stands out for its distinctive citrusy taste and versatility. The marmalade is made from fresh yuzu zest, tree-ripened yuzu segments and fresh-squeezed yuzu juice. (Yuzu is an East Asian citrus fruit that has a lemon-lime-grapefruit flavor.) “It takes 30-35 pieces of yuzu to make one jar of marmalade,” explains Theresa Miller, sales representative. Honey and sugar are also added to create a sweet-tart flavor profile. The marmalade works as a filling for tarts, a bread or cheese accompaniment, a dipping sauce for spring rolls when mixed with soy sauce or as a glaze for grilled meats or fish. “Yuzu has such a short growing season and is expensive,” Miller continues. “This marmalade extends that season and makes the flavor accessible year-round.” Suggested retail price: $45.95/1-kilo. sidwainer.com. –N.
