On the west coast of Africa, the country of Sierra Leone has a cuisine that relies on the abundance of local seafood, meats, vegetables and fruits. The staple food of rice is served with most meals. Cassava, yam or potatoes are ubiquitous as well. Sierra Leonean meat stew comprises beef, lamb or goat simmered with tomatoes, eggplants, chilies and fresh egg. Prawn Palava is a dish of sautéed prawns, scotch bonnet chili, fresh spinach, thyme and smoked fish. Snacks come in the form of fresh mango and pineapple or street vendor offerings such as skewered meats, bags of peanuts or popcorn, and cassava chunks with hot pepper sauce.

For dessert, banana pancakes are popular and drinks include tea, coffee and Poyo, a lightly fermented, sweet palm wine tapped from local trees.—Leska Tomash
