Spicy Fried Chickpeas

Serves: 4-6

Ingredients:

2 cup canned chickpeas, drained and rinsed
6 cups canola oil
2 teaspoons Berbere spice
2 teaspoons Chermoula spice
4 tablespoons chopped parsley
Salt to taste
(The spices mentioned can be found in gourmet grocery stores or by visiting le-sanctuaire.com.)

Method:

1. Fill a heavy bottom pot with the oil. Bring oil to 350 degrees and fry chickpeas until crispy, about 2-3 minutes.

2. Remove chickpeas from the pot with a slotted spoon and reserve on a paper towel.

3. Mix warm chickpeas with berbere, chermoula and parsley. Sprinkle with salt to taste. Serve.
