Try out this Sundried Swordfish recipe that uses Sauces 'n Love sundried tomato pesto, a sofi™ Silver Finalist in the 2009 Outstanding Condiment category.

Sauces 'n LoveSundried Swordfish

Ingredients:2 pounds swordfish
1 jar (4.5oz) Sauces 'n Love sundried tomato pesto
1 Blood orange juiced
2 Tbsp. extra virgin olive oil
Zest of one lemon
Ground pepper to taste
Marinate and chill fish for one hour in all ingredients listed above except the sundried tomato pesto.
Remove to room temperature for 20 minutes.
Grill fish between 7-10 minutes each side (depending on thickness). Top with sundried tomato pesto.
Serve with fresh salad or baked string cut potatoes, sweet potatoes and cippolini onions in extra virgin olive oil baked on 350 degrees for 35 minutes, stirring occasionally.
