The Bahamas

Although the Bahamas lie in the Atlantic Ocean, this archipelago of 700 islands (about 30 are inhabited) is considered geographically to be part of the Caribbean. The cuisine of the islands reflects the Caribbean influence with bountiful fresh seafood including crawfish, land crabs, grouper, yellowtail tuna and conch. Bahamian stew fish is a dish made with fresh fish, onions, tomatoes and spices. Lightly steamed fish is popular served with sides of macaroni and cheese, crab and rice and potato salad. Souse is a savory soup of lime juice, onions, peppers and oxtail or pigs' feet.

Of course, rum is a popular drink of the islands as is the local beer, Kalik. For nonalcoholic beverage options, there is refreshing coconut water or the citrus-lime drink called Switcher. Desserts include such treats as pineapple tart, bread pudding and guava duff, a fruity pastry. –Leska Tomash
