user ratingWhen your backyard is home to 40 percent of the world’s sweet potato crop, it’s only natural to use it to your advantage. The Polka Dot Bake Shop, in Charlotte, N.C., has done just that.
From the beginning two years ago, the bakery’s freshly baked cakes, cookies and muffins made from all-natural ingredients were a hit. But, the sweets only whet customers’ appetites for more, leaving Polka Dot to look toward the backyard for inspiration.
Their idea was to introduce a savory treat. And they knew just where to begin—with sweet potatoes. The bakers mixed and mashed, eventually ending up with the world’s first cracker made from sweet potatoes, introduced earlier this year.
CrispiThins are crunchy, savory and cracker-like. They pair well with wine, dips and salads and come in a variety of flavors including cracked black pepper, rosemary and olive oil, and smoked chipotle. The main ingredient is sweet potato, which is high in fiber and has a low glycemic index. With a hint of sweet, this savory treat aims to please.
