The country of Togo in West Africa borders Ghana, Benin, Burkina Faso and the Gulf of Guinea. The gulf provides a bounty of fish including blue marlin, skipjack tuna, lobster, hard-shell crabs and round sardinella (a type of ray-finned fish).

The fresh seafood is prepared a variety of ways such as simply grilled by the water's edge or incorporated into rich sauces of eggplant, tomato and spinach and served over rice. Koklo meme is a local dish comprising grilled chicken with a spicy chili sauce. Pâtés range from traditional pork to palm nut-cassava to the adventurous agouti (a bush rat). Another local dish, fufu, consists of mashed yams with peanut sauce.

Tropical fruits such as guava, coconut and mango serve as dessert. Palm wine and beer are popular Togolese beverages.—Leska Tomash
